Do yourself a favor. Next time you find yourself with watermelon, lemon basil, and feta on hand, go ahead and reserve some watermelon for a watermelon salad with a tangy kick.
At a recent family get-together at our house, my parents showed up with a gigantic bowl of fresh watermelon. I thought about dicing it up and adding some fresh lemon basil I had recently purchased at our Arkansas Farm2Home event which supports our local farmers. The basil came from Preston Rose Farm in Paris, Arkansas.
Dad reminded us that a relative from Greece that we visited once had served us watermelon and feta cheese over and over again. Despite the look of skeptism on my father-in-law’s pace, I got busy dicing watermelon and fresh basil. In less than 10 minutes, the salad was ready to put in the fridge to chill a bit. Since my idea was last minute, the dish really did not get much of a chance to chill before eating. Next time, I will make it in advance.
Use Lemon Basil in this Watermelon Salad
The lemon flavor off of the lemon basil really gave a nice citrus flair to the overall salad. Next time I make it, I will definitely try to have more lemon basil on hand. This recipe is made often with regular basil (which tastes great, too), but I am convinced the tanginess of the lemon basil gives this watermelon salad a certain punch.
You can always add a touch of balsamic dressing to dress up the salad a bit. I didn’t have time to make any since dinner was literally almost on the table, and it was really quite good without any dressing.
While chopping, I reassured my father-in-law that I had left plenty of watermelon for basic watermelon indulging. The poor guy was concerned.
Who can blame him?
- 3 cups watermelon, diced into bite-sized pieces
- 1/2 cup feta cheese crumbles
- 2 tablespoons fresh basil (preferably lemon basil)
- Salt and pepper, to taste
- Dice the watermelon.
- Chop the basil.
- In a medium-sized bowl, gently combine the watermelon, the basil, and the feta cheese crumbles.
- Generously season with salt and pepper to suit taste.
- Chill and serve.
A friend of mine from Greece told me I had to try halloumi cheese in a watermelon feta salad. I’ve never tried it, but she says it tastes like “heaven.” Now, I feel like I must hunt it down and give it a shot! Have you ever made watermelon salad with feta or with any other cheese?
